Wolf Hollow Brewing Company – Glenville, NY

Description: Fall Tree Oktoberfest is WHBC’s version of the classic German marzen style. It uses large amounts of Munich and Caramel malt for a deep, rich malt profile that highlights an intense caramel sweetness. A slight presence of alcohol accompanies the malt to generate a slight warming sensation with every sip and the yeast used allows for a clean finish amidst all the sweetness of the malt.

ONCO Fermentations – Tully, NY

Description: Our annual Marzen is brewed with German malts (Pilsner, Pale, and Munich malts), German Nobel hops, and fermented with yeast from a Bavarian Monastery. Brewed earlier this year and given a long layering process, ONCtOberfest (2025) will be officially released September 21, ’25 at our 5th annual ONCtOberfest! The beer presents with a biscuity aroma (slight caramel note) that leads the way to a creamy, rich malty beer. This beer finishes moderately dry while keeping the rich malt backbone on the palette. Prost!

Description: Crunchy leaves call for the Crispest Lager! A total passion project- we brewed this in the dead heat of summer and have been cold lagering it ever since. Curious about the name? It’s a reference to bands like Motorhead and Motley Crew using Umlauts in their name with no real purpose.

Description: Klosterbock is a strong, dark Bavarian-style wheat beer brewed with over 50% wheat malt and fermented with a classic hefeweizen strain. It pours deep mahogany with aromas of banana bread, clove, and toasted malt and at 8.5% ABV, it’s equal parts monastery and mischief.

Description: DASSAI BLUE Nigori begins with Yamada Nishiki rice—revered as the “king of sake rice”—sourced from both Arkansas and Japan. The rice undergoes meticulous polishing to 50% before entering a 35-day fermentation process using pristine New York water. The signature cloudy appearance comes from blending moromi (fermentation mash) back into the pressed sake. This sake was just released on September 1st, 2025.
